One of life’s great joys is to indulge in impulse: that is exactly how the idea of experimenting with pinot grigio on our hillside came to fruition. “Ramato”, as it is commonly called, is a wine subject to a phase of maceration of the grapes at low temperatures and in contact with their skins. The result is an intense and boldly aromatic wine, characterized by distinct notes of exotic fruit and rose petals.

Following destemming and crushing, the must is cryo-macerated at 4°C for 12/24 hours pre-fermentation, straight after the must is pressed softly (0.8 atm). The must, after a static cold decantation, is fermented in stainless steel tanks at controlled temperature of 14-15°C
Aged in temperature controlled cement tanks for 4 months, followed by bottling
12.5% Alc by Vol, 6.5 g/l total acidity, pH 3.20
Intense and aromatic, characterized by notes of tropical fruits and rose petals. Fresh, intense palate with a slightly savory finish
Ideal companion for aperitivo, but also great with fish crudo and risotto’s
