One of the most iconic varietals in Sicily, grillo relishes on the steep slopes of our estate with strong diurnal temperature variations. This particular vineyard rises from an ancient wild pear orchard that bursts into flower every spring to the delight of the vineyard works and the landscape. The wine takes its name from the local dialect (“Costa del Pero”) of this special parcel. The vineyard’s favorable position lends an elevated natural acidity to the wine giving it a fresh, flavorful and precise character with generous, fruity tones.

Hand harvested within the first half of September
Following destemming and crushing, the must is cryo-macerated at 4°C for 06/12 hours pre-fermentation, straight after the must is pressed softly (0.8 atm). The must, after a static cold decantation, is fermented in stainless steel tanks at controlled temperature of 14-15°C
Aged “sur lie” for 3-4 months in cement tanks with controlled temperature followed by bottling
12.5% alc by vol, 6.2 g/l acidity, pH 3.20
Notes of white flowers, peach, pineapple, pink grapefruit and citrus. A fresh and flavorful finish
