A high-profile expression of 100% Nero d’Avola made using particular techniques of maceration and vinification including a small percentage of whole cluster grapes. Following a submerged cap maceration and a brief period in cement, the wine matures for eight months in large botte before bottling. It then stays in the cellar for at least two years after harvest. The result is a complex wine that is as fine as it is balanced with mature, enveloping tannins.

After destemming and crushing, the must undergoes a pre-fermentation
maceration at 8-10 °C, following fermentation and maceration at 18/20 °C for
roughly 15-20 days.
After the alcoholic fermentation, malolactic fermentation takes place
spontaneously.
Aging in controlled temperature cement tanks for 6 months, then moved to large botti for 6 months followed by at least 6 months in bottle
14 % Alc by Vol, 6.40 g/l total acidity, 3.38 pH
In the glass, a bright ruby red color, while the nose presents rose petal, wild strawberry and pomegranate. On the palate, the wine is fragrant with pronounced minerality, acidity and length
